Brought my mum here for her birthday lunch. It was a great idea. My mum enjoyed a lot. The food, service, ambience deserved all the stars I'm giving.
I would like to highlight the level of attention to detail Chef Kimura gives to every of his dish. The level of his craft is not about the freshness or even generosity of the fish anymore. It's about which method of preparation best suits each fish, from ageing to the last squeeze of sudachi or dab of salt onto the fish. It is precision, harmony, and most importantly, culmination of experience and respect for the seasons that Chef Kimura has.
I'll definitely be back.
Was there for lunch and the food was simply amazing. The service standard was extremely comfortable and reminded me of Japanese hospitality. The wide selection of fishes that is air flown in four days a week was also one of the highlights. My favourite was the rice bowl top with Uni. Its taste was just out of this world, you can even ask for more rice! which the Chef Kimura gladly obliges! Definitely gonna visit again with some friends.
Used Hokkaido water for almost everything .... so can taste the rice individually in the mouth, with v good grade of hand-crafted vinegar!
