Chinatown Hawker Centre is undoubtedly my top best go to hawker centre even among the CBD Top Fives, including People's Park, Hong Lim, Amoy, and Maxwell, each loaded with plenty of Michelin recommended eats and local favourites. Here at Chinatown, asides being the largest Hawker Centre in Singapore, also the highest number of great Cantonese eats. This stall is one of it. Though located in the green zone, unfortunately when I drop by this row I will usually go for the Claypot Kitchen, or Weng Kiang Kee Porridge, or Fatty Ox noodles. All my favourites. I did made a mental check to try this stall someday, but thus far its been years. Cantonese style fish soup, since early years I had been a regular for Hong Kong Street Zhenji fish soup for years. The creamy fish soup broth is derived from boiling fried fish bones to extract that collogen, then add ginger and premium spirits. Since then a lot of cheaper alternatives in normal fish soup stalls are just to use a shortcut and add evaporated milk for creaminess. It doesn't work if there isn't fish bones umami if you know your fish soup. So when my offering came, and it was already stated at the stall No Milk Added. One spoonful taste is enough to get me hooked. Here, aside a clean and smoky taste of fried fish bone creamy, there's a clean taste of fish soup with no alcohol spirit distractions, except light white pepper and a thin slice of ginger. My $5 bowl of pure fish soup goodness also came with many slices of fresh, nicely cooked toman fish, and lots of greens. It is great value simply for the fresh fish slices and umami packed soup. Definitely coming back for more.

Chinatown is still one of the best place to hunt for old school food and for those whom are missing their food trips with grandparents. This stall is one of those that serves old school Cantonese style fish soup. The soup is boiled till murky from essence of the fresh fish bones and without milk added. There is a non-fishy fresh fish flavour in the soup. The fish slices are very fresh and you know that when you sometimes get one or two fish scales in your mouth. Price is reasonable at $5.50 for this bowl of slice fish mee hoon. Waiting time is around 20mins on a weekday 1.30pm.

Flavourful bowl of the fish soup. The milky colour from the soup came from cooking the fish bones for long hours and not from the milk added like other stalls.

Excellent plate of black bean sauce hot fun. Wok hei infused kuay tiao with smoky savoury bean sauce and fresh fish slices make this a winner. Has queue during weekday lunch so be there early!!

Very fresh fish. Soup tasty, boiled to perfection, no milk. Fried hor fun wok hei with super yummy gravy. My 80+ years old mum can't get enough of it. Only 1 aunty's serving so please don't confuse her by changing your table. Sop: 1. Decide what you want to eat 2. Place your order with auntie. If dining in, tell her your table number. Try not to change your table as it is troublesome for auntie who is handling the service by herself. 3. Sit n have a drink. Be prepared to wait. 4. Pay when the food is served to you. Never fails to satisfy.

The black bean fish collar meat sliced hor fun was succulent and with ‘wok hei’ fragrant. The starched gravy was tasty yet not too salty. The fish soup looked normal but the soup was delicious with no added milk and wouldn’t feel thirsty thereafter.

Simply amazing, the soup is really refreshing! Different from the usual non-cantonese ones we find in SG. The wok hei on the hor fun is fantastic as well! Really a great find and prices are v affordable as well.
